Date & Nut Energy Balls

Ok, this isn’t really a recipe blog, but I’ve had so many people ask me about these delicious morsels that it seemed selfish NOT to post them on here.

Ingredients

10 ounces pitted dates
1.5 cups organic oats (gluten free if necessary), finely ground up in a food processor
7 ounces of nuts, half finely ground and half roughly chopped ( (I’ve used toasted hazelnuts, almonds and brazils)
7 ounces dried fruit (cranberries, blueberries, pineapple etc)
2 tablespoons crystallised ginger (chopped up)
4 tablespoons dessicated coconut
2 tablespoons wheatgerm (leave this out if you’re gluten free)
5 tablespoons mixed seeds (I use linseed, pumpkin, sunflower & sesame)
1 teaspoon mixed spice
3 tablespoons honey (optional)

Put the dates into a small saucepan with cold water, bring to the boil, drain and whizz up with the honey in the food processor. Mix together all of the ingredients, then shape into balls a bit bigger than a walnut. Place on a baking tray and bake in a preaheated oven at gas mark 4 for about half an hour, or until brown(er).
